Cooking with Chickpea Flour

A friend introduced me to Chickpea flour several months ago.  She made a delicious vegetable patty using chickpea flour.  The most impressive part was that no binder was needed, the chickpea flour held together perfectly.  After playing with the seasonings and veggies used in the patty I shared this great find on a video.

Of course I kept playing with the chickpea flour and discovered it also make a great flatbread, known as Socca or Farinata.  I found I could lighten the flavor by mixing oat flour to the mix.  The discovery of Chickpea flour pancakes really made my day.  Everything good, high protein, high fiber, and no wheat flour or eggs needed. 

Most of the recipes for Socca use water but I have found I like the flavor of the bread better if I use a nut milk, and add ½ cup of oat flour.  Once the basic ingredients are assembled any of the herbs or other seasonings can be added as desired.  Adding garlic powder or The Italian seasoning will make it a bit more savory.  Adding vanilla, cinnamon, honey and your favorite sweetener makes for a sweet treat without guilt.

Chickpeas are an excellent source of protein once ounce has 3 grams, and fiber 2 grams for the one ounce.    There is always a container of hummus in the fridge for my husbands snacks. 

For those of us who have stopped using wheat flour in all its forms here are some high protein, high fiber alternatives that taste great too.

Chickpea Flour Flat Bread

1 Cup Chickpea Flour; 1/2 Oat flour; 1/2 tsp Salt; 1/4 tsp Pepper; 1 TBL Olive oi;l 1 3/4 Cup Nut Milk; Heat oven to 450 degrees; Place 10 inch cast iron skillet into oven while heating.

Chickpea Flour Wrap

1 Cup Chick Pea Flour; 1/2 Cup Tapioca Flour (Starch); 1/2 tsp Salt; 1 Cup Water or Nut Milk; Small amount of Oil to coat frying Pan

Chickpea Flour Pancakes

1 cup Chickpea Flour; 1/2 Oat flour; 2 tsp baking power; 1 Tablespoon Arrowroot Powder; 1 tsp Cinnamon; 2 Tablespoons Maple Syrup Powder;( or Honey or Maple Syrup ect..); Pinch Salt; 1 tsp Vanilla; 1 1/2 Cups Nut Milk (Almond Milk).
